Add smoking wood to the lump charcoal to impart flavor during the cook. On first cook, start by burying 4-6 chunks in the lump charcoal around where you light the lump. As the lump burns it will burn the chunks. Add two chunks directly on the fire when adding the cook to the grill. On subsequent cooks, add more or less wood to achieve desired flavor profile. You do not want wood burning during the entire cook.
