    Unmatched flexibility, intelligently designed, signature taste - that is a grill, smoker and an oven all in one. Well established in the USA, although originally an oriental method, kamado cooking offers an experience akin to owning an outdoor cooker.

    Kamado style ceramic cookers are extremely versatile. Not only can they be used for grill­ing and smoking, but pizza can be cooked on a pizza stone and bread can also be baked. This is by virtue of the excellent heat retention properties of the ceramic shell that mean temperatures of up to 750°F can be achieved. Also, due to the precise control of airflow (and thus temperature) afforded by the vent system, Kamado-style cookers are much like wood-fired ovens and can be used to roast and bake anything that can be roasted or baked in a traditional oven.

    Clay vessels have been used by humans to cook food for many thousands of years. Clay cooking pots have been found in every part of the world and some of the earliest dated by Archaeologists to be over 3000 years old have been found in China. It is believed that in these circular clay cooking vessels are the origins of the modern Kamado albeit the clay finally being superseded by ceramic materials.

    Kamado grills are generally fueled by traditional lumpwood charcoal. One of the benefits of the ceramic construction is that there are no flavour contamination (metallic taste) to the cooked food and for the same reason, lumpwood charcoal is the preferred choice for modern kamado cooking. Not only does lump charcoal create little ash, it is also made form natural wood. If you use alternative fuels such as charcoal briquettes or self-lighting charcoal, these can contain many additives that can contaminate the flavour of the food.

    If you are a serious outdoor cooker and put a priority on taste, then a ceramic grill is likely your best choice.

    The most common ccomment you will get form your guests is how moist the meat. The second most common comment is that you have cooked it so well (without burning it!)

    These grills use a combi­nation of ceramic shell, natural lump charcoal and air flow to offer a su­perior charcoal taste and the ability to cook food at high temperatures and have it retain its moistness . You can cook as low as 100°C or well over 400°C, so you can use it as an oven, a grill or a smoker and even a hot pizza oven. Ceramic grills are ready to use in 15 minutes. The key to this temperature control is the highly controllable airflow which, which along with the sealed nature of the Joe when the lid is down, enables you to control both temperature and flames with precision.

    Ceramic grills have an initial learning curve when it comes to adjusting the airflow to achieve the desired tem­perature. The weight of these grills averages around 150lbs, so you may need help placing it in the cart or moving it up stairs to a raised deck or balcony. Ceramic grills are ceramic and while not fragile, they are susceptible to chipping or breaking if dropped or hit with significant force.
